In my country, they are done only inside churches. I would love to see a celebration like the one you talk about, it looks like a proper carnival with people having fun instead of praying in a closed church (lol). The food in the market looks amazing. When I travel I like to go and eat in the market as well, with the locals. That's a sure place to find the best local food.
